Mutton Fry

Mutton - 1 pound
Onion - 1 big finely chopped
Tomatto - 1 big finely chopped
Ginger Garlic Paste - 1 spoon
Bay Leaf - 2 Big
Cinamon Sticks - 1 small
Cloves - 2
Redi Chilli Powder - 1 Spoon
Turmeric - 1/2 spoon
Coriander Powder - 2 spoon
Pepper Powder - 3 spoons
Coriander Leaves
Milk - 50 ml
Oil - 10 spoons
Salt to taste

Step A
Wash Mutton in running water along with turmeric.

Step B
Mix it with pepper powder / salt and let it get marinated for 10 minutes.Pressure cook until 2 whistles.

Step C
Pour oil in Pan then put Cinamon and Clove along with Bay leaf fry the same.Once this is fryed add Coriander leaves and chopped onion to the same and fry well until its golden brown.Now add ginger garlic paste and fry it for a while.Now add red Chilli Powder ,Salt,Coriander Powder and Turmeric Powder.Once this is added pour 1/2 glass of water and then add tomatto and mutton.Now add milk to this and fry the same.Add coriander leaves for garnishing before u serve.

Mutton Liver Fry

Mutton Liver Fry

Mutton Liver - 1 lb
Turmeric Powder - 1/4 spoon
Red Chilli Powder - 1/4 Spoon
Pepper Powder - 1 spoon
Salt to taste
Ginger Garlic Paste - 1 spoon
Onion - 1/2 finely chopped
Oil - 3 spoons

Step A
Cut Liver into small pieces and wash with running water(Peel of the skin if incase there is a small layer of skin above the liver).Add turmeric while washing.

Step B
Pour Oil in Pan and fry Onion.Once Onion is fryed put ginger garlic paste and fry the same.Then put red chilli powder along with turmeric powder and salt.Add liver to the same along with pepper powder.Pour 1/4 glass of water and close the lid.Liver Fry will be ready in 5 minutes.

Egg Kothu Parotta /Mutta Parotta /Kothu Parotta

Kothu Parotta

1> Parotta finely chopped- 4
2> Onion finely chopped - 1
3> Tomatto finely chopped- 1
4> Curry Leaves - 15
5> Chilli - 2
6> Pepper Powder - 1
7> Chilli Powder - 1/4 spoon
8> Salt to taste
9> Scrambled Eggs - 3
10> Turmeric Powder - 1 pinch

Step A
In a Pan pour 4 spoons oil and then Fry Curry Leaves.

Step B
Put Onion and then fry.Once onion is fryed put tomatto and fry the same.

Step C
Put chilli and fry after tomatto is fryed.Put Chilli Powder ,Pepper Powder , Turmeric Powder,Salt and fry the same.

Step D
Once Step C is done add the scarmbled eggs and then add Parotta and fry the same.Scramble if possible.Check for spice level.Kothu Parotta is ready.

Non Spicy Peas Pulav

Serves 2 people

1> Basmati Rice - 2 cups
2> Onion - 1 finely chopped
3> Green Chillies - 2
4> Peas - 1/2 cup
5> Salt to taste
6> Bayleaf - 2
7> Cloves - 2

Step A :
Clean Basmati rice in running water and then soak the same in water for 15 to 20 minutes.

Step B :
Fry basmati rice with 5 spoons of Ghee after 20 minutes.

Step C :
Pour Oil/Ghee in pan and then add Bayleaf ,Gingergarlic paste,Cumin Seeds and roast well.

Step D :
Once step C is roast put onion and once its fried put chillies and then peas and fry the same.Once this is fried put the stuff prepared in step B and pour 1:1.5 cups of water to the rice(In our case we need to pour 3 and half cup of water).Add salt and mix it well.Let it be in cooker for 10 minutes.Peas Pulav is ready.This goes well with any gravy.You can check our site for your favourite gravy.

Easy Dry Fish Fry(Nethili Fry)

Dry Fish Fry(Nethili Fry)
Serves : 2 people

1> Dry Fish (Nehili) - 100gms
2> Chilli Powder - 2 spoons
3> No Salt
4> Oil - 4 spoons

Step 1
Clean Nethili with running water.
Marinate Nethili with Chilli powder and then keep aside for 15 minutes

Step 2
Pour oil in pan and fry nethili.

Vadacurry (Vadai Curry / Vada Curry)

Vadacurry (Vadai Curry / Vada Curry)

Serving Size - 2 people

1> Bengal Gram Dal (Kadalai Parupu) - 1 cup
2> Curry Leaves - 15 leaves
3> Coriander leaves cut - 4 spoons
4> Ginger - 10gms mashed
5> Salt to taste
6> Chilli Powder - 1 spoon
7> Turmeric - 1/2 spoon
8> Bayleaves - 2
9> Cloves - 2
10> Cinamon stic - 1/2
11> Saunf - 1/2 spoon
12> Oil to fry vada and 4 spoons to make vadacurry
13> Onion - 1 finely chopped
14> Tomatto - 1 finely chopped
15> Green Chillies - 2

Step 1:
Soak Bengal gram dal in water for 30 minutes and grind it to 3/4th.

Step 2:
Pl Note : Dont add anything to Step1 like salt / spice
Fry the stuff which you got in Step1 in oil as vadas.Pl dont mind the shape in which it comes.

Step 3:
Pour oil in a pan.Fry Bayleaf,Clove,Cinamon Stic and roast it.Once this is roasted put Saunf and fry a bit.

Step 4:
Put Ginger and fry it.Then add Onion to it and fry.

Step 5:
Put Tomatto to stuff got in Step4 and then fry then green chillies and then fry curry leaves.Once fryed put turmeric powder , red chilli powder and then add salt to it.Pour 2 glasses of water and once water boils.Put the Vadas made in step 2 and close the pan.Before closing the pan check for spice level.

Step 6:
Garnish the stuff prepared in step 5 by using coriander leaves.Vadacurry is ready.

Shark Puttu (Sorra Puttu)

Shark Puttu - Sorra Puttu

1> Shark (Sorra) 2 Pounds
2> Garlic - Peeled - 20 Pieces
3> Curry Leaves - 40 pieces
4> Ginger - 30gms chopped
5> Turmeric - 1 Spoon
6> Chilli Powder - 1 and 1/2 Spoon
7> Green Chillies - 4 chopped
8> Salt to taste
9> Onion - 3 Big Finely Chopped

Step A
Clean shark by applying turmeric(Not one spoon..Just some)in running water

Step B
Bring the cleaned shark to boiling water and boil it for 5 minutes.

Step C
Remove the shark from water and clean the surface(Peel the skin / Avoid Putting head portion).

Step D
Mash the shark now

Step F
Pour 3 spoons of Oil in a pan and then put Garlic , Ginger , Curry Leaves and fry it.

Step G
Add Onion and Saute till its golder brown.Add Chopped Chillies and fry for some more time.

Step H
Add the mashed Shark prepared in step D to it and then add Turmeric , Chilli Powder and then Salt.Fry it for 5 minutes.Your spicy Shark Puttu(Sorra Puttu is ready)

Kaadai 65 (Quail 65)

1> Kaadai 6 Nos
2> Red Chilli Powder 1 Spoon
3> Salt to taste
4> Ginger Garlic Paste - 1 and 1/2 Spoon
5> Lemon 1
6> Color Powder
7> Maida Powder - 3 Spoons
8> Rice Powder - 1 Spoon
9> Turmeric Powder

Steps :
A> Mix Red Chilli Powder with salt and then add color powder along with Maida Rice and Turmeric Powder

B> Mix Kaadai with a spoon of turmeric and clean it with running water and add Ginger Garlic Paste and Lemon and mix well

C> Mix the masala prepared in Step A to Step B and keep it aside for 1.5 hours

D> Taste and check for salt and spice level
- Add salt / spice if incase it is missing

E> Heat oil in container and fry it

5 Minute Lemon Rasam

5 Minute Lemon Rasam

Lemon - 1 big
Tomatto - 1 big
Curry Leaves - 10
Coriander Leaves
Turmeric - 1/4 spoon
Asafoetida - 2 pinch
Pepper Powder - 3/4 spoon
Jeera Powder - 1 and 1/2 spoon
Salt to taste
Garlic - 4 pieces
Green Chilli - 1
Red Chilli - 1
Mustard Seeds
Urud Dal - 1 spoon

Step A
Take Juice from Lemon and Make tomatto as a paste.Both can be mixed together.

Step B
Crush the Garlic and Green Chilli.Mix Asafoetida(one pinch) along with Curry Leaves,Pepper ,Jeera Powder,Salt and Turmeric.Add this to Step A.Check for spice level and salt.

Step C
Pour two spoons of Oil in the pan and then put Mustard seeds and then urud dal and then one pinch of Asafoetida.Then add the stuff prepared in Step B to Step C.Let it boil once.Once it boils put the Coriander leaves.

Step D
5 Minute Lemon Rasam is ready for serving.

Chettinadu Karuvadu Kolambu(Dry Fish Gravy)

Karuvadu Kolambu

1> Dry Fish - 100gms
2> Black Beans(Mocha kotta) - 75gms
3> Egg Plant(Brinjal / Kathirikai) - 3 (Each cut into 4 pieces)
4> Onion - 1 Finely Chopped
5> Tomatto - 1 Finely Chopped
6> Vendhiyam - 1/2 spoon
7> Curry Leaves - 15 leaves
8> Tamarind - 10gms(Make this as a paste)
9> Turmeric - 1/2 spoon
10> Red chilli Powder - 1 spoon
11> Coriander Powder - 2 spoon
12> Salt to taste
13> Oil 5 spoons
14> Coconut milk - 1 cup(50ml)

Step 1 :
Fry 2 in an empty plan for 5 minutes in medium sim (No oil)

Step 2 :
Soak Step1 result in a glass of water for 1 hour

Step 3 :
Pour Oil in PAN and then fry 6 / 7 and then 4 / 5 and fry well in the same order

Step 4 :
Pour Tamarind paste and couple of glasses of water

Step 5 :
Put 9 / 10 / 11 and mix it well

Step 6 :
Add 3.Once the contents in step 6 gets boiled.Add Step 2 stuff here and let it boil once.

Step 7 :
Check all the above are well cooked and then put 14 and after one boil.Put Dry fish and then let it boil once atleast and then remove the pan from flame.

Step 8 :
Karuvadu Kolambu is ready
